Thinking About Your Signature Drink?

By Carlise (Carla) Shepperd
Pink Drink.jpg

If you are looking for recipes for your signature drink then you've just got to visit TheBar.com! You can search for Cocktails, Vodka or Martinis but better yet, do a search for wedding drinks. Here you can find what The Bar have listed for wedding receptions but if you don't see something you like there it may be easier to find one by color instead.

I did a search and was surprise to learn that there are purple alcoholic drinks! I am not a drinker but I still find it fascinating because couples can create a signature drink to match practically any of their wedding colors.

For your non-drinking guests, there are some drinks here at TheBar.com for you to choose from, however, the list itself is not that impressive. The good news about it though is that each one of these drinks got a very good rating which means that they may have chosen only to list the better tasting non-alcholic drinks out there.

Check out The Bar today...you might find a recipe that you not just like, but love.

Recipes for Delicious Non-Alcoholic Drinks

By Carlise (Carla) Shepperd
Cocktail Glasses.jpg

The first time I heard the term "Mocktail" used was while watching an episode of the Tyra show where Tyra Banks, the host, was explaining to some teens that they didn't have to drink alcohol to have fun at a party! She went on to talk about the drinks she orders when she is out with friends and they were Mocktails, which are fake cocktails, which doesn't include any alcohol at all. I don't drink either but our signature drink is going to be a version of "The Blue Lagoon" which has vodka in it. However, I've recently found a recipe for a blue Mocktail that is perfect for me and all the non-drinkers at the reception. I've also listed some non-alcoholic drink recipes that might be perfect for your guests.

Blue Curacao Mocktail

  • peeled skin of lemon

Pomegranate Lime Champage Recipe

Pink Mocktail.jpg

How To Decorate Cookies with Royal Icing Video

By Carlise (Carla) Shepperd

If you are creating a Cookie Buffet for your guests then one way to add color to your DIY cookies is by icing your cookies. I realize that not everyone would know how to do this so I added this video for those who don't. Below you can find a recipe that's perfect to use if you want to cut out shapes and an easy recipe that is perfect for icing them. I hope they will all help you to create a variety of beautiful, delicious sugar cookies to add to your buffet.

Remember you can search online at Etsy, Karen's Cookies and offline at Walmart among the many places to find the baking supplies you'll need.

Perfect Sugar Cookie Recipe for Cut-Out Cookies
Source: Cake Central

Ingredients
*6 cups flour
*3 tsp. baking powder
*2 cups unsalted butter
*2 cups sugar (white granulated)
*2 eggs2 tsp. vanilla extract or desired flavoring
*1 tsp. salt

Instructions
  1. Cream butter and sugar until light and fluffy. Add eggs and vanilla. Mix well. Mix dry ingredients and add a little at a time to butter mixture. Mix until flour is completely incorporated and the dough comes together.
  2. Chill for 1 to 2 hours (or see Hint below)
  3. Roll to desired thickness and cut into desired shapes.
  4. Bake on ungreased baking sheet at 350 degrees for 8 to 10 minutes or until just beginning to turn brown around the edges.
*This recipe can make up to 5-dozen 3” cookies, is soft when finished and magarine can be subsituted for butter but remember to cut the amount of salt you use in half.

HINT:
Rolling Out Dough Without the Mess — Rather than wait for your cookie dough to chill, take the freshly made dough and place a glob between two sheets of parchment paper. Roll it out to the desired thickness then place the dough and paper on a cookie sheet and pop it into the refrigerator. Continue rolling out your dough between sheets of paper until you have used it all. By the time you are finished, the first batch will be completely chilled and ready to cut. Reroll leftover dough and repeat the process! An added bonus is that you are not adding any additional flour to your cookies.

Tips from Wilton.com

"Keep all utensils completely grease-free for proper icing consistency."

You can now make your own gourmet brownies with the premium chocolate mix from Ghirardelli. I just found out about this yesterday while watching the Oprah show and it was actually one of her favorite things! If Oprah says it's delicious then I believe it is especially since I am a huge fan of Ghirardelli chocolate!

You can find this brownie mix online at the Ghirardelli website here for $4.50 but shop locally for it at Kmart and maybe even Walmart since they carry everything and that way you will save on the shipping.

Bacon and Herb Roast Turkey Breast

Recipe courtesy of Emeril Lagasse and Food Network

Turket Breast.jpg

Ingredients
  • 3 strips thick-cut bacon
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon freshly chopped sage leaves
  • 1 1/2 teaspoons freshly chopped rosemary leaves
  • 1 teaspoon freshly chopped oregano leaves
  • 1 teaspoon freshly chopped thyme leaves
  • 3 tablespoons unsalted butter, softened at room temperature
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 1 (5 1/2 to 6-pound) whole turkey breast, rinsed and patted dry
Directions

Preheat the oven to 375 degrees F and line a shallow roasting pan or baking dish with aluminum foil.

Cook the bacon in a medium skillet until crisp. Transfer to paper towels to drain, reserving 1 tablespoon of the rendered bacon fat separately. When the bacon has cooled, chop it finely and transfer to a small bowl. Add the garlic, sage, rosemary, oregano, thyme, butter, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper. Using a small spoon, mix thoroughly to combine and form a paste.

Using your fingertips, gently loosen the skin on both sides of the turkey breast so that it is separated from the flesh. Divide the herb paste in half and gently spread half between the skin and flesh on each side of the breast. Season the outside of the turkey breast with the remaining teaspoon of salt and 1/2 teaspoon of pepper. Brush the turkey all over with the reserved bacon fat. Place prepared turkey breast in the prepared pan and roast, uncovered, until an instant-read thermometer inserted into the deep portion of the breast registers 165 degrees F, 1 hour to 1 hour and 10 or 15 minutes. Remove from the oven and allow to rest for 20 minutes before carving into thin slices. Serve with the pan drippings.

Honey Baked Ham

Recipe courtesy of The Neelys and Food Network
Honey Ham.jpg

Ingredients
  • 6 pounds bone-in Ham
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 2 teaspoons cornstarch
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper

Directions

Preheat oven to 350 degrees F.

Place ham on a rack in a foil lined roasting pan. Bake the rounded side up for one hour.

In a medium saucepan over medium heat, mix all ingredients together. Stir until it forms a nice thick glaze.

Rub on half of the glaze and bake for 30 minutes more. Flip the ham over and rub on remaining glaze and bake for 1 hour more. Remove from oven and allow the ham to rest for at least 30 minutes before serving.

Herbed Basmatic Rice

Recipe courtesy of Ina Garten and Food Network
Basmati Rice.jpg
Ingredients
  • 1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
  • 1 3/4 cups water
  • 3/4 teaspoon kosher (or regular table) salt
  • 1 tablespoon unsalted butter
  • 2 tablespoons minced fresh curly parsley leaves
  • 1 tablespoon minced fresh dill leaves
  • 1 tablespoon minced fresh scallions, white and green parts
  • Pinch freshly ground black pepper
Directions

Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

Oven Roasted Red Potatoes with RoseMary and Garlic

Recipe courtesy of Paula Deen and the Food Network
Potatoes.jpg

Ingredients
  • 1 1/2 pounds small new red potatoes (about 15), scrubbed and dried
  • 1/4 cup extra-virgin olive oil
  • 4 to 6 cloves garlic, crushed
  • 1 tablespoon fresh or 1 teaspoon dried rosemary
Directions

Preheat the oven to 350 degrees F.

Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled and served with fried chicken or ham.

Delicious Meatballs and Spaghetti

Recipe coutesy of the Barefoot Contessa and Food NetworkSpaghetti.jpg

For the meatballs:
  • 1/2 pound ground veal
  • 1/2 pound ground pork
  • 1 pound ground beef
  • 1 cup fresh white bread crumbs (4 slices, crusts removed)
  • 1/4 cup seasoned dry bread crumbs
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1/2 cup freshly grated Parmesan cheese
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 extra-large egg, beaten
  • Vegetable oil
  • Olive oil
For the sauce:
  • 1 tablespoon good olive oil
  • 1 cup chopped yellow onion (1 onion)
  • 1 1/2 teaspoons minced garlic
  • 1/2 cup good red wine, such as Chianti
  • 1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
For serving:
  • 1 1/2 pounds spaghetti, cooked according to package directions
  • Freshly grated Parmesan
Directions

Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.

Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.

For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.

Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.

Caesar Salad with Parmesan Cheese

salad.jpg

Ingredients
  • 1 tablespoon olive oil
  • 1/2 teaspoon minced garlic
  • 1 cup bread, cut in 1/2-inch cubes
  • 3 hearts romaine lettuce
  • 1/2 cup Caesar Dressing, recipe follows
  • 1/2 cup shaved Parmesan
Directions

In a large skillet heat the olive oil over medium heat. Add the garlic and bread cubes, tossing well to coat with oil. Toast in the skillet for 7 minutes until golden.

Tear the romaine hearts into bite size pieces. Toss with the Caesar Dressing making sure to coat all the leaves generously. Garnish with shaved Parmesan and the garlic croutons.

Having a Breakfast or Brunch Buffet?

By Carlise (Carla) Shepperd

breakfast.jpg

If you are a small budget bride I am sure that you've already been told to have your reception in the morning to save money by serving breakfast or brunch to your guest which is always cheaper than the dinner menu. However, if you are a bride who is making your own breakfast buffet and need a little help then here's a list of the most common breakfast items: scrambled eggs, omelets, sausages, bacon, frittata or quiche, crepes, waffles, French toast, bagels, rolls, croissants, pastries, pancakes, muffins, bananas, fruit salad, oranges, pineapple, berries and spreads such as cream cheese.

For your drink selection you can serve coffee, tea, hot chocolate,
juice or champagne if it's at brunch. I think pigs in the blanket would be a fun addition and remember you can slice a whole ham thinly to serve for breafast and they are less than $14 for a large one at Walmart.

If you would like to create something new and interesting AllRecipes.com is a great go to site! I always find what I am looking for there with tons of reviews with tips on how they've change it to make it better or even more interesting. So you can have some fun creating your menu but remember don't get too fancy if you want your food budget to stay small, just make sure that everything taste really good!
