A Five Star Egg Nog Recipe

Ingredients:
  • 4 cups milk
  • 5 whole cloves
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 12 egg yolks
  • 1 1/2 cups sugar
  • 2 1/2 cups light rum
  • 4 cups light cream
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground nutmeg
Directions:
  1. Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan, and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil.
  2. In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves, and let cool for about an hour.
  3. Stir in rum, cream, 2 teaspoon vanilla, and nutmeg. Refrigerate overnight before serving.

I am all about being different and it's always fun to step away from the traditional or what's expected and to give a surprising twist! So this Thanksgiving I am making pumpkin pie but I am using this recipe from Family Fun to make it with a Cranberry Topping instead of the plain pumpkin pie I usually make. If you were looking to do something different this year with your menu then this could be what you were looking for so I thought I'd share it with you!

Make Your Own Gourmet Brownies

You can now make your own gourmet brownies with the premium chocolate mix from Ghirardelli. I just found out about this yesterday while watching the Oprah show and it was actually one of her favorite things! If Oprah says it's delicious then I believe it is especially since I am a huge fan of Ghirardelli chocolate!

You can find this brownie mix online at the Ghirardelli website here for $4.50 but shop locally for it at Kmart and maybe even Walmart since they carry everything and that way you will save on the shipping.

Bacon and Herb Roast Turkey Breast

Ingredients
  • 3 strips thick-cut bacon
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon freshly chopped sage leaves
  • 1 1/2 teaspoons freshly chopped rosemary leaves
  • 1 teaspoon freshly chopped oregano leaves
  • 1 teaspoon freshly chopped thyme leaves
  • 3 tablespoons unsalted butter, softened at room temperature
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 1 (5 1/2 to 6-pound) whole turkey breast, rinsed and patted dry
Directions

Preheat the oven to 375 degrees F and line a shallow roasting pan or baking dish with aluminum foil.

Cook the bacon in a medium skillet until crisp. Transfer to paper towels to drain, reserving 1 tablespoon of the rendered bacon fat separately. When the bacon has cooled, chop it finely and transfer to a small bowl. Add the garlic, sage, rosemary, oregano, thyme, butter, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper. Using a small spoon, mix thoroughly to combine and form a paste.

Using your fingertips, gently loosen the skin on both sides of the turkey breast so that it is separated from the flesh. Divide the herb paste in half and gently spread half between the skin and flesh on each side of the breast. Season the outside of the turkey breast with the remaining teaspoon of salt and 1/2 teaspoon of pepper. Brush the turkey all over with the reserved bacon fat. Place prepared turkey breast in the prepared pan and roast, uncovered, until an instant-read thermometer inserted into the deep portion of the breast registers 165 degrees F, 1 hour to 1 hour and 10 or 15 minutes. Remove from the oven and allow to rest for 20 minutes before carving into thin slices. Serve with the pan drippings.


Honey Baked Ham

Ingredients
  • 6 pounds bone-in Ham
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 2 teaspoons cornstarch
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper

Directions

Preheat oven to 350 degrees F.

Place ham on a rack in a foil lined roasting pan. Bake the rounded side up for one hour.

In a medium saucepan over medium heat, mix all ingredients together. Stir until it forms a nice thick glaze.

Rub on half of the glaze and bake for 30 minutes more. Flip the ham over and rub on remaining glaze and bake for 1 hour more. Remove from oven and allow the ham to rest for at least 30 minutes before serving.


Herbed Basmatic Rice

Ingredients
  • 1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
  • 1 3/4 cups water
  • 3/4 teaspoon kosher (or regular table) salt
  • 1 tablespoon unsalted butter
  • 2 tablespoons minced fresh curly parsley leaves
  • 1 tablespoon minced fresh dill leaves
  • 1 tablespoon minced fresh scallions, white and green parts
  • Pinch freshly ground black pepper
Directions

Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.


Oven Roasted Red Potatoes with RoseMary and Garlic

Ingredients
  • 1 1/2 pounds small new red potatoes (about 15), scrubbed and dried
  • 1/4 cup extra-virgin olive oil
  • 4 to 6 cloves garlic, crushed
  • 1 tablespoon fresh or 1 teaspoon dried rosemary
Directions

Preheat the oven to 350 degrees F.

Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled and served with fried chicken or ham.


Delicious Meatballs and Spaghetti

For the meatballs:
  • 1/2 pound ground veal
  • 1/2 pound ground pork
  • 1 pound ground beef
  • 1 cup fresh white bread crumbs (4 slices, crusts removed)
  • 1/4 cup seasoned dry bread crumbs
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1/2 cup freshly grated Parmesan cheese
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 extra-large egg, beaten
  • Vegetable oil
  • Olive oil
For the sauce:
  • 1 tablespoon good olive oil
  • 1 cup chopped yellow onion (1 onion)
  • 1 1/2 teaspoons minced garlic
  • 1/2 cup good red wine, such as Chianti
  • 1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
For serving:
  • 1 1/2 pounds spaghetti, cooked according to package directions
  • Freshly grated Parmesan
Directions

Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.

Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.

For the sauce, heat the olive oil in the same pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes. Stir in the tomatoes, parsley, salt, and pepper.

Return the meatballs to the sauce, cover, and simmer on the lowest heat for 25 to 30 minutes, until the meatballs are cooked through. Serve hot on cooked spaghetti and pass the grated Parmesan.


Caesar Salad with Parmesan Cheese

Ingredients
  • 1 tablespoon olive oil
  • 1/2 teaspoon minced garlic
  • 1 cup bread, cut in 1/2-inch cubes
  • 3 hearts romaine lettuce
  • 1/2 cup Caesar Dressing, recipe follows
  • 1/2 cup shaved Parmesan
Directions

In a large skillet heat the olive oil over medium heat. Add the garlic and bread cubes, tossing well to coat with oil. Toast in the skillet for 7 minutes until golden.

Tear the romaine hearts into bite size pieces. Toss with the Caesar Dressing making sure to coat all the leaves generously. Garnish with shaved Parmesan and the garlic croutons.

Having a Breakfast or Brunch Buffet?

If you are a small budget bride I am sure that you've already been told to have your reception in the morning to save money by serving breakfast or brunch to your guest which is always cheaper than the dinner menu. However, if you are a bride who is making your own breakfast buffet and need a little help then here's a list of the most common breakfast items: scrambled eggs, omelets, sausages, bacon, frittata or quiche, crepes, waffles, French toast, bagels, rolls, croissants, pastries, pancakes, muffins, bananas, fruit salad, oranges, pineapple, berries and spreads such as cream cheese.

For your drink selection you can serve coffee, tea, hot chocolate,
juice or champagne if it's at brunch. I think pigs in the blanket would be a fun addition and remember you can slice a whole ham thinly to serve for breafast and they are less than $14 for a large one at Walmart.

If you would like to create something new and interesting AllRecipes.com is a great go to site! I always find what I am looking for there with tons of reviews with tips on how they've change it to make it better or even more interesting. So you can have some fun creating your menu but remember don't get too fancy if you want your food budget to stay small, just make sure that everything taste really good!

A Cheap, Chic Dessert Table Idea...

If you pay very close attention to this photo you will notice that some of the serving platters to the front of the table are elevated by vases. These square vases are filled with Clear Luster Gems and they look fantastic.

This is a cheap yet chic table decor idea that you can use yourself. You can find cheap vases from thrift shops, yard sales, flea markets and your local dollar stores in varying heights to add dimensions to your display. Then just add luster gems which can also be found at dollar stores in quite a few different colors, one of which will match your theme. If you don't find them in your area you can always shop online here online at DollarTree.com where a bag of gems is sold for $1.00!

Food for thought...

Top Chef which airs on Bravo at 10/9c has been one of my favorite reality shows since it gives season and unseason chefs the chance to prove show talent to the world. What I love most about it though are the recipes, it's watching how the chef's plate the food to serve to the guests and judges. Even if it's something as simple as a piece of fried banana, they add so many visual elements to that plate that even I may not mind paying $30.00 for it.

The reason I am discussing this is because I know there are many brides-to-be who would love to have a sit down dinner but is worried that it will be too expensive. There is a way to compromise. What Top Chef proves if the food is good, no one mind that the portions are smaller. So maybe it's ok to consider making your own food at home, deliver it to the venue buffet style, but have someone plate the food for the guests. That way you would not have to spend as much for food as you would for an open buffet bar, and if it's visually pleasing, your guests won't mind taking those few steps to get their appetizing meal. It's food for thought.

DIY Food Platters for under $10.00

In the deli section of your local supermart you'll find a variety of party trays to choose from usually starting at around $15! Well, if you look closely at what you get for your money, much of the price goes into the prep work that's put in since the items are food that you can pull together yourself to create the same eye-catching, hearty and tasty platter that you can serve either at your Cocktail Hour or at your Wedding Reception.

This beautiful platter is filled with ham and turkey slices that you can pick up at Walmart or a specialty store for under $3.00 for a pack with 25 slices. The Oscar Mayer brand is tasty and still affordable if you are not sure what to hamd and turkey slices to buy and Kraft is a popular choice when it comes to cheese.

The last wedding I attended had these on the menu and they were gone fairly quickly. They are simply made with soft taco shells, filled with slice turkey, ham, salami or roast beef. The green is usually lettuce, spinach or avocado in some cases. To create a vegetarian wrap you can use lettuce, tomato, cucumber, spinach and/or any veggie you think would be a tasty addition, but it easy to roll!

Once you have all you need, it's just a matter of layering, rolling, cutting and stacking till you're done.
