Ingredients

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup pink jimmies
- 1/2 cup butter, softened
- 8 oz cream cheese, softened
- 3 tablespoons strawberry puree
- 1 tablespoon strawberry gelatin
- 1 teaspoon vanilla extract
- 4-5 cups powdered sugar

Amaretto Apple Streusel Cupcakes Recipe

Amaretto Apple Streusel Cupcake...doesn't that sound delicious? I love sharing the recipes for some of the unique cupcakes I find online because if you are serving cupcakes at your wedding, adding an unexpected but delicious one to the mix is something your guests would enjoy.
INGREDIENTS:
- Cooking spray
- 6 3/4 ounces all-purpose flour (about 1 1/2 cups)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 3/4 cup granulated sugar
- 1/4 cup (2 ounces) 1/3-less-fat cream cheese, softened
- 1/4 cup butter, softened
- 2 tablespoons amaretto (almond-flavored liqueur)
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup reduced-fat sour cream
- 1/4 cup 2% reduced-fat milk
- 3/4 cup finely chopped Gala apple
- 1 tablespoon all-purpose flour
- Streusel:
- 2 tablespoons all-purpose flour
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons butter, chilled
- 2 tablespoons sliced almonds
- Glaze:
- 1 cup powdered sugar
- 4 teaspoons 2% reduced-fat milk
DIRECTIONS:
1. Preheat oven to 350°.
2. Place muffin cup liners in 12 muffin cups; coat with cooking spray.
3. Weigh or lightly spoon 6.75 ounces (about 1 1/2 cups) flour into dry measuring cups; level with a knife. Combine 6.75 ounces flour, baking powder, salt, and baking soda in a small bowl, stirring with a whisk. Combine granulated sugar, cream cheese, and 1/4 cup butter in a large bowl; beat with a mixer at high speed until well blended. Add amaretto, vanilla, and egg to sugar mixture; beat with a mixer at medium speed until well blended. Combine sour cream and 1/4 cup milk in a small bowl; stir with a whisk until well blended. Combine apple and 1 tablespoon flour in a small bowl; toss well.
4. Add flour mixture and sour cream mixture alternately to sugar mixture, beginning and ending with flour mixture. Beat just until blended. Fold in apple mixture. Divide batter evenly among muffin cups.
5. To prepare the streusel, combine 2 tablespoons flour, brown sugar, and ground cinnamon in a small bowl. Cut in 2 tablespoons butter with a pastry blender or 2 knives until mixture resembles coarse meal; stir in almonds. Sprinkle streusel evenly over cupcakes. Bake at 350° for 27 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes on a wire rack, and remove the cupcakes from pan.
6. To prepare glaze, combine powdered sugar and 4 teaspoons milk in a small bowl, stirring with a whisk. Drizzle glaze over cupcakes.

DIY Snowflakes Cupcakes

I would admit that after reading the recipe I realize that these may not be the easiest cupcakes to make since you'll have to make the snowflakes too but with a little practice you can have these cute cupcakes at your wedding that will fit right into your theme. I attended a birthday party in January where a little mini cupcake tower cake was the cake of choice for the birthday girl. I thought it was cute and since I am planning of having cupcakes at my wedding, I wanted to see how others have been displaying their mini cupcakes and I hope you like what I found.




Cup Cake Wedding Cakes

The key to creating a cupcake wedding cake that looks amazing to first choose the right size of tower or stands. You can rent them at party supply stores or you can buy online but the prices range from $29.99 from Efavormart.com HERE like the one below,

If you want a bigger stand, I would suggest renting it since from my research you can get them for about $45 dollars, even less sometimes from a party rental store, or event rental shop.
After locating a stand for the size tower you want to create, you will need to find or get the right paper to bake the cupcakes in to give them the look you want. Get sheer cupcake liners if you want the cupcake color to be visible and the paper less obvious. Or get color paper that matches the theme of your wedding. I would keep away from the silver foil since the look always seem to give too much of a home-made look. You can find other color liners like the one below for $18.96 for 500 from cakesbysam.com.

The white ones are even cheaper at $6.00 for 500. But I would pay a little more for the color and hot glue white bows on all of them to give them style. To make them look similar to the ones in the photo.

Just bake your cupcakes using your own recipe or even a box cake mix . You can find them in many flavors and they are quite good. (I won't be ashamed to use them to make a wedding cake.) You can then decorate the cupackes with frosting using a pastry bag to give a professional polish. The video below shows you how.
Once you are all done, as you see in the video, you can add chocolate hearts, flowers, whatever you wish to personalize them. Then just stack the cupcakes neatly on the stand and add flowers or ribbons to decorate. What you will have is a cupcake tower you can be proud of.
