Roasted Chicken with Lemon & Herbs $7.80 to make!

This recipe is perfect for any bride-to-be who are preparing a buffet spread for their wedding reception. Your guest will love it!
  • 1 medium lemon
  • 4 - to 5- lb. roasting chicken
  • 1/4 cup Hellmann's® or Best Foods® Real Mayonnaise
  • 2 Tbsp. finely chopped flat-leaf parsley
  • 2 tsp. finely chopped fresh thyme leaves
  • 1 tsp. finely chopped fresh sage leaves 
  • 1 clove garlic, finely chopped
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  1. Preheat oven to 425°. From the lemon, grate enough peel to measure 1 teaspoon, then cut lemon in half.
  2. Season chicken, if desired, with salt and pepper. Combine Hellmann's® or Best Foods® Real Mayonnaise, parsley, thyme, sage, garlic, lemon peel, salt and pepper in small bowl. Spread 1/4 cup mayonnaise mixture under chicken skin, then spread remaining on outside of chicken. Place lemon halves in cavity.
  3. Arrange chicken breast side up in 13 x 9-inch roasting pan, with or without rack. Roast 10 minutes. Reduce heat to 375° and continue roasting 50 minutes or until meat thermometer inserted in thickest part of the thigh reaches 180°.

Cheesecake Squares

Cheesecake Squares
These fruit-topped cheesecake squares make a festive display on our Cupcakes ‘N More Dessert Stand (sizes hold 13 to 38 servings). The 13-count size, one per table, makes a great centerpiece for weddings.

Tools:

Ingredients:

  • 3 recipes Favorite graham cracker crust recipe
  • 3 recipes Favorite cheesecake recipe
  • blueberry pie filling (to serve on cheesecake)
  • cherry pie filling (to serve on cheesecake)
SIMPLE CHEESE CAKE  
1 (8 oz.) pkg. cream cheese
1 pkg. instant lemon pudding
2 tbsp. lemon juice
1 3/4 c. milk
1 baked pie shell
Put all ingredients, except pie shell, in blender or food processor and process until smooth. Pour into pie shell and put in refrigerator until set.

  • Prepare cheesecake recipe and pour over crust.
  • Bake and cool following recipe directions.
  • Refrigerate overnight.
  • Cut into 2 in. squares.
  • Flatten baking cups and place a cheesecake square on each.
  • Position cupcakes on stand.
  • Add a little blueberry pie filling and/or cherry pie filling to each cheesecake square.

Wedding Reception Food Options

Pros and Cons of Buffets, Sit Downs Dinners and Other Catering Ideas

What's the best way to feed a room full of hungry wedding guests? Is the traditional sit down dinner the best option? Should you go with a buffet? Or how about something a little different, like an appetizer party or a brunch? To help you decide, here are some advantages to consider for each of these catering options.

Advantages of the sit down meal:
  • If you want your reception to be formal and elegant, the sit down meal may be the better bet. Picky guests are more likely to be impressed.
  • Your guests don't have to work for their food! This is especially helpful to elderly guests and guests with small children.
  • For guests who have traveled a long distance, it may feel appropriate to feed them with a more formal meal.
  • You don't have to worry about running out of food.
  • Guests don't have to worry as much about making a mess on their nice clothing.

Advantages of the buffet meal:

  • If you want your reception to be more casual and laid back, a buffet might be the better bet. Guests are more likely to feel comfortable.
  • Buffets are usually less expensive than sit down dinners. There's no wait staff to pay, and the food is often cheaper.
  • You can offer your guests a variety of food options. Aunt Bertha will be satisfied with the meat and potatoes, and your vegetarian cousin Aurora will be delighted with the veggie lasagna. People enjoy having a bounty of food to choose from.
  • Buffets encourage mingling. They force people to get up from their table, at least once!

Advantages of the appetizer party:

  • Serving appetizers instead of a full meal is definitely a cheaper option. If you serve hearty appetizers, your guests will feel well fed without the extra expense.
  • Appetizers allow you to be flexible and creative. You can choose a theme, like tiny cheeseburgers and miniature hot fudge sundaes. Or you can can choose food that matches the bridesmaids' gowns. Use your imagination!
  • Appetizers allow you to provide a mix of food for various tastes and lifestyle choices. You can serve appetizers for the beef eaters, the fish eaters, the vegetarians, the low-carb dieters, the spice haters, the spice lovers, and so forth.
  • If you want people to mingle, this is any easy way to do that.
  • For a variation, try a dessert party! Who wouldn't enjoy that?

Advantages of the brunch:

  • Unless you serve your eggs with lobster and caviar, catered brunches tend to be much cheaper than catered lunches and dinners.
  • You can be flexible with the level of formality. Brunches can be dressed up to be elegant with mimosas or dressed down to be casual with donuts. You can have a sit down brunch or a buffet.
  • Most people like big yummy breakfasts. Serve some decadent French toast and you won't have many naysayers. People associate brunches with fun and family gatherings.
  • A brunch is original. Your guests have been to plenty of weddings where they serve chicken Kiev and baked potatoes. People will remember your unique brunch menu.

Sugar Cookies Perfect for Wedding Favors

Here's a Sugar Cookie recipe you can watch then try your hand at making the recipe below.

Grandma Minnie's Old Fashioned Sugar Cookies

Ingredients
  • 3 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1 cup butter
  • 1 egg, lightly beaten
  • 3 tablespoons cream
  • 1 teaspoon vanilla extract
Directions
  1. Preheat oven to 400 degrees F (200 degrees C) .
  2. Over a large bowl, sift together all-purpose flour, baking powder, salt, sugar. Cut in butter and blend with a pastry blender until mixture resembles cornmeal. Stir in lightly beaten egg, cream, and vanilla. Blend well. Dough may be chilled, if desired.
  3. On a floured surface, roll out dough to 1/8 inch thickness. Sprinkle with sugar; cut into desired shapes. Transfer to ungreased baking sheets.
  4. Bake for 6 to 8 minutes, or until delicately brown.

Serving a Buffet Dinner at Your Reception?

If you are serving a buffet style dinner at your reception, be sure to keep these  six things in mind.

1. Try to have a server at your buffet table to cut your ham or turkey etc for your guests and to keep an eye on things, making sure that guests are doing nothing more with the food than taking their share and walking back to their table. You can have a friend fill on your weddinf day or pay someone to do it for $40 bucks for the day.

2. The food does not have to be gourmet, just delicious. So whatever you decide to serve at your reception, make sure it's something that will be satisfying to all your guest. Not too spicy or not too bland.

3. Try not to serve food that has to be refrigerated to keep fresh such as potato salad which could go back very quickly. We don't want guest running to the bathroom or leaving sick from the reception.

4. If a friend or family member offer to cook the food for your reception, make sure they are cooking recipes that they are familiar with and that you've tasted them cook before. There's no harm in asking them to prepare a dinner for you and your fiance one night so that you can be sure that you are comfortable having their food served at your reception.

5. Try and choose a menu that will give you the most for your hard earned dollars. A 30 lbs frozen Butterball turkey from Walmart is about $25 and so is a whole 30lbs ham. You can find a roast at a decent price especially if you shop at a Sams Club or a Cosco. There you can find a lot of food in bulk like lettuce, tomato, carrots to make a salad and much more. You'd be surprise that with a 30lbs ham, 30lbs turkey, large roast, 100 rolls, huge salad, 10 lbs of red potatoes and 5lbs of cooked Basmati rice that you could serve 100 people easily for under $500 bucks.

6. My most important tip is to please try and keep food warm in a warming tray  that's not from the dollar store. Remember we have to keep that platinum style through-out the wedding, so  you can rent food warmers from your local party rental like the one below for about $20 each or less depending on the size you choose.

Candy Buffet Bars - Hot Wedding Trend

I love this idea of having a candy buffet bar mainly because I have a major sweet tooth. The one pictured above is an easy one to replicate using the different colored candies and hershey's kisses to match your wedding.

You can find everything you need to create this piece at this link at save-on-crafts.com .
If you look closely at the photo, the candy are in vases, not the fancier candy jars which cost more. So below I give you some examples of the size and height of vases you can use to give you a great looking candy table.

Instead of the hershey kisses on the table though, use acrylic ice crystals, since we are always going for that wow factor. You can find them in many different colors HERE including yellow, brown and many more.

Cup Cake Wedding Cakes

Look at that cupcake tower below... it is awesome. I have been thinking about creating a cupcake tower cake for my wedding and seeing photos like this really inspires me to opt for this style of weddig cake that is becoming more and more popular.






The key to creating a cupcake wedding cake that looks amazing to first choose the right size of tower or stands. You can rent them at party supply stores or you can buy online but the prices range from $29.99 from Efavormart.com HERE like the one below,

If you want a bigger stand, I would suggest renting it since from my research you can get them for about $45 dollars, even less sometimes from a party rental store, or event rental shop.

After locating a stand for the size tower you want to create, you will need to find or get the right paper to bake the cupcakes in to give them the look you want. Get sheer cupcake liners if you want the cupcake color to be visible and the paper less obvious. Or get  color paper that matches the theme of your wedding. I would keep away from the silver foil since the look always seem to give too much of a home-made look. You can find other color liners like the one below for $18.96 for 500 from cakesbysam.com.

The white ones are even cheaper at $6.00 for 500. But I would pay a little more for the color and hot glue white bows on all of them to give them style. To make them look similar to the ones in the photo.

Just bake your cupcakes using your own recipe or even a box cake mix .  You can find them in many flavors and they are quite good. (I won't be ashamed to use them to make a wedding cake.) You can then decorate the cupackes with frosting using a pastry bag to give a professional polish. The video below shows you how.



Once you are all done, as you see in the video, you can add chocolate hearts, flowers, whatever you wish to personalize them. Then just stack the cupcakes neatly on the stand and add flowers or ribbons to decorate. What you will have is a cupcake tower you can be proud of.

My Wedding Cake

his is the cake I plan on making for my wedding which should be quite simple since I just basically have to make it, cover it with the fondant, put on each layer, put the columns in, put the plates on till I get the top and the put the flowers around the top of each layer.

This is where to get each of the items I just mentions:

You can find rolled fondant at a Michael's, Walmart in the bride else, but the Satin Ice fondant is the best to use and taste better. You can buy some online at www.fondantsource.com, 5 lbs for $14.29 to cover your cake. The  HERE to be linked directly to the satin ice fondant (it taste better).

Step 1:

For me that was picking out the style of cake that I wanted and found one on the internet that I liked. There are over 300 hundred of them at this HERE.

Step 2:

Next I had to figure out where to get the stands and columns that this one used. Click HERE for those that I found below.

It doesn't come assembled, the pieces are sold separately. For 4 plates: 12'', 8'', 6'', and 4'', that's $27.00. The columns are in a set of 12 and the one I'll get cost: $14.

Step 3: Find the decorations:

The ribbon is sold at Walmart for 33cents per yard, and for that cake, it looks like 15 yards to go around the cake and 10 for the bow. So I will probably just buy a 25 yard roll at Walmart, Michael', or a Hancock Fabrics.


The flowers: I will be using some of the velvet roses, that I am buying for my centerpieces from efavormart.com for $34.99 for 168. They look very real. Find the  flowers that are pictures below HERE!
