I love this cake topper, it's too funny and perfect for the bride who had to fight for a wedding day. I have an uncle who has been engaged for almost all his adult life to the same woman who he now shares 3 children with. He is very committed to his fiance, who is such a sweetheart, but he is so against a wedding day, he keeps saying it's not necessary. Well, when they do get married, which may be soon since he is softening to the idea, this would be a cake topper I'd suggest his fiancee gets. All the guests who know them would truly understand why she chose it. (hehe)
Wedding Cake Alternative - Cream Puff Cake Stand

Makes 10 servings
Ingredients
- Cream Puff Dough
- Filling (choose one of the following):
- -Ice cream
- -Chocolate-Orange Cream
- -Lightly sweetened whipped cream flavored with vanilla or a liqueur
- Chocolate ice cream topping (optional)
- Powdered sugar (optional)
Preparation
1. Spoon Cream Puff Dough into 10 equal mounds (about 1/4 cup each) about 2 inches apart on two lightly buttered 12- by 15-inch baking sheets.
2. Bake in a 375° regular or convection oven until puffs are golden, 25 to 35 minutes; if baking the sheets at the same time in one oven, switch their positions halfway through. With a wooden skewer, poke each puff in several places, then continue baking until golden brown, dry, and crisp, 5 to 8 minutes longer. Transfer puffs to racks to cool completely.

3. Slice the top third off each puff. Fill each bottom with 1/2 cup of one of the following: ice cream, Chocolate-Orange Cream, or lightly sweetened whipped cream flavored with vanilla or a liqueur. Cover with tops, and drizzle each puff with 2 to 3 teaspoons chocolate ice cream topping or sprinkle lightly with powdered sugar.

Mini Fudge Wedding Cakes

Ingredients
Makes 14 cakes
- Nonstick cooking spray
- 2 cups granulated sugar
- 1 teaspoon fine salt
- 6 tablespoons unsalted butter
- 1 cup heavy cream
- 3 1/2 cups mini marhsmallows, 8 ounces
- 1 teaspoon pure vanilla extract
- 3 cups coarsely chopped dark or white chocolate, 20 ounces
- 2 tablespoons sanding sugar
Directions
- Cut three 3-by-18-inch strips waxed paper; line 9-by-12-inch rimmed baking sheet, 1 strip along length and 2 along width. Allow strips to hang over sides. Coat with cooking spray; set aside. In medium saucepan, combine granulated sugar, salt, butter, cream, and marshmallows. Cook, stirring occasionally, over medium-low heat until most of the butter and the marshmallows are melted, 4 to 5 minutes. Bring to boil; boil, stirring, 5 minutes. Remove from heat. Add vanilla and chocolate; stir until completely smooth. Pour immediately into prepared baking sheet; let cool, 3 to 4 hours.
- When fudge is firm enough to work with, use paper to lift fudge onto a cutting board. Using 1-, 1 1/4 -, and 1 1/2-inch round cutters, cut out 14 rounds of each size. Pour sanding sugar into a small, shallow bowl; dip top of each round in sugar. Stack rounds to form 3-layer cakes; let stand until fudge is completely solid, about 1 hour.
